How Our Instant Coffee Is Produced

In early 2015, I visited our production facility in Hamburg, Germany, before we had started our business in the USA. I had previously visited a few other coffee production sites, so I wanted to see how this facility compared.

First of all, I’d like to mention that Hamburg is a huge transportation hub that connects all European destinations with countries all over the world. It makes it easier for us to deliver our products directly from the production line – fresh and fast. The coffee production site is a privately owned family business, which separates us from being just another corporate project. It becomes a family legacy. I always try to work with people who are personally invested in their business, and who care about the results and their reputation.

When I arrived in Hamburg, I asked our manager for a private tour. He was very welcoming. They take it very seriously when people are at the production site. For the sake of safety and cleanliness of production units, there is a strict dress code. I was asked to remove any sharp and metal objects (even all the jewelry I was wearing!), to put on special disposable clothes and a cap. And so the tour began.




At first I was taken to the warehouse where the beans are stored. Prior to being roasted, the coffee beans are green. In order to keep them fresh and preserve their best qualities, the beans are contained in big rug bags and stored where the temperature and humidity are strictly controlled. Each type of bean is labeled and separated accordingly. They are then used to create different blends that create the unique tastes and aromas of each coffee brand. This is how it is absolutely certain that every cup has the same wonderful taste of your favorite Egoiste Café Noir.




Our next stop was the roasting facility. I loved the strong and rich aroma of the roasting coffee. Mmmmm! I could spend the whole day there! Workers carefully overlook the entire process. Despite the fact that the production facility is highly automated (so there are not many people around), there are several key areas where it is crucial to only use human labor instead because the machines can’t be trusted. Perhaps one day robotics can do that work, but not today. The green coffee is now being mixed and roasted in a controlled batch size that is smaller than most other manufacturers to ensure quality.




The next stage is grinding and extraction. Coffee extraction is the process of dissolving soluble flavors from coffee grounds in water. Did you know that the grinding machines are the second most expensive equipment on the whole site, after the freeze-drying unit? I learned that there is a specific method to grinding roasted beans in order to make the extraction process successful. Otherwise the coffee will lose all of its essential qualities and taste during the extraction. The extraction step could be the easiest, and it is always the same whether it is freeze dried, agglomerated, or spray dried coffee. Again, the equipment is huge but all automated. Workers here only supervise the process to ensure everything goes according to instructions. Proper brewing requires using a specified quantity of coffee, grinding it precisely, and extracting it to the correct degree by the correct time and temperature. Once completed, the liquid coffee extract is stored in huge tanks.




After making the coffee extract from the magic begins, it is the freeze-drying step. This process involves four steps, beginning with "primary freezing." Coffee extract is chilled to a “slushy” consistency at about 20°F (-6°C). The pre-chilled slush is placed on a long steel belt and further cooled until it reaches a temperature of -40-(-50)°F (-40-[-45]°C). It is important to use a slower cooling process, which takes 10-180 minutes, because it generates larger and darker granules with rich flavor. Faster cooling processes, which can take 30-120 seconds, save time however, result in smaller, lighter colored products sacrificing taste and aroma.

In the next step, the slabs of ice are broken into pieces and ground into particles of the proper size for drying. The particles are sieved to ensure proper sizing, and those that are too small are melted and returned to the primary freezing stage.

The frozen particles are then sent into a huge drying chamber where the ice vaporizes and is removed. And now the product is finished and looks perfect! All granules are the same size but are each unique like a snowflake. The proper instant freeze-dried coffee is all about precision. You’ll never find any coffee powder or broken granules inside the jar. The process has been perfected down to a science.



And now for the final step: packing. The packing lines are all automated, and so interesting to observe. As the empty jars move, they are stickered and filled with coffee. All the jars are weighted to guarantee every promised gram of our coffee makes it in your jar. They are then sealed with lids and put onto trays. Due to the machinery’s efficiency, we receive pallets of finished product packed carefully to ensure safe transportation and storage.

 And with that, my huge warehouse tour was over and I must say I was really impressed.

Enjoy these quick and easy recipes with Mexican flavor while celebrating Cinco de Mayo!

Café Noir Horchata

Combining the best of both flavors, this recipe adds a European twist to a classic Mexican treat. Serve this beverage at your daytime fiesta or enjoy the refreshing drink once the sun goes down. This recipe works great with both store-bought and homemade horchata.


For the homemade horchata:

  • 1 cup of uncooked long-grain white rice
  • ½ teaspoon ground cinnamon
  • 4 ½ cups of water (room temperature)
  • ¼ teaspoon Mexican vanilla extract
  • 1/3 cup brown sugar
  • 1.5 oz. dark rum

For the coffee:

  • 2 teaspoons Egoiste Café Noir Instant Coffee
  • ¼ cup hot water

Instructions for horchata:

Wash and drain rice. Combine rice, water and cinnamon. Soak overnight. Add mixture to blender until mostly blended. Strain mixture through cheesecloth 1-2 times. Add brown sugar and vanilla extract and stir.

Instructions for complete drink:

Combine Egoiste Instant Coffee and hot water. Refrigerate for 1-2 hours. Pour horchata, rum and ice in a mixer. Shake and pour into new glass. Refrigerate leftover horchata. Pour in Egoiste, dust with cinnamon and enjoy.

  • 8 teaspoons Egoiste Café Noir Instant Coffee
  • 1 cup hot water
  • 1.5 oz. Kahlua
  • 1 tablespoon unsweetened cocoa powder
  • ¼ teaspoon Mexican vanilla extract
  • 1-2 scoops vanilla ice cream

Step 1

Combine Egoiste with hot water, stir for 30 seconds.

Step 2

Stir in Kahlua, tequila, cocoa powder and vanilla.

Step 3

Top with vanilla ice cream and serve.


This recipe can also be made iced by refrigerating Egoiste for 1-2 hours and pouring mixture over ice.

Egoiste Cafe Noir Makes Its Canadian Debut

Canada, are you ready?
In the middle of April, Svetlana and I took part in our first Canadian food show in Montreal. SIAL is a huge international platform that helps thousands of exhibitors and customers find each other in the food industry from all over the world. 
Wondering why we decided to take part in this show? We wanted to introduce our coffee to people in Canada. Egoiste Cafe Noir shared a platform with other coffee companies at the show including industry giants.
Our schedule was very busy beginning on the first day. People were stopping at our booth and telling us they’ve never seen such a great package for coffee! The overall opinion was it was eye-catching, luxurious looking and very unusual. Of course we invited them to try it because we know that the taste of our Egoiste Café Noir instant coffee would impress them much more than our package.
ALL of them were skeptical when we told them we were offering them instant coffee. But we used our charm to convince them to try it. Everyone was impressed by the taste. They didn't waste a drop.
We were so pleased and encouraged with the reaction. We served coffee in the morning and people started coming to our booth later during the day asking for a cup because they heard from someone else at the show that there’s a great coffee being served at our booth. We were the talk of the show!
We were really impressed by the fact that our coffee was well received by not only retailers and distributors, but also by coffee shops and hotel owners. It really gives us a huge potential in the Canadian market and we’ll be happy to give Canadians this new wonderful experience of buying great tasting instant coffee.
Moreover, our other products in the line – whole bean and ground coffee – were also in high demand. And on the day 3 we even worried that we could run out of samples! 
All three days of the show were very interesting, intensive and busy for us. It was our great pleasure to meet other coffee companies at the show. Their representatives came to our booth because they heard of a new company at the show and were curious who we were and what we were offering. I consider it as another sign of success for the show. 
So making a long story short by the end of the third day we were almost out of samples, we served tons of cups of coffee, we received great feedback and we made a lot of promising contacts. So Canada is definitely ready for a great instant coffee and we’ll be there to meet the demand!
